Automating Artisan Bread - A three-day course held at Pastry Smart in San Mateo, CA. The 3 day class will cover automating Baguettes, Pan Bread, Ciabatta, and other artisan breads and rolls. This class is for the professional baker only and all participants must have a solid understanding of baker's math and have at least 3 years baking experience.
